- 4 medium bell peppers (any color)
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth or water
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder (optional)
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar, mozzarella, or dairy-free alternative)
- Fresh cilantro or parsley for garnish (optional)
Method
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it sit for 5 minutes.
- While the quinoa is cooking, prepare the bell peppers. Slice the tops off the peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and garlic until translucent, about 3-4 minutes.
- Add the cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, chili powder (if using), salt, and pepper to the skillet. Mix well to combine and cook for another 5 minutes, allowing the flavors to meld.
- Remove the skillet from heat and stir in half of the shredded cheese.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in. Top each stuffed pepper with the remaining cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
