Ingredients
1 cup quinoa (uncooked)
1 can (15 oz) chickpeas, drained and rinsed
1 red bell pepper, diced
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled (optional)
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon garlic powder
Salt and pepper, to taste
Method
Cook the quinoa: Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Prepare the vegetables: While the quinoa is cooking, prepare the vegetables. Dice the bell pepper, cucumber, and red onion. Halve the cherry tomatoes and chop the parsley.
Combine ingredients: In a large bowl, combine the cooked quinoa, chickpeas, diced vegetables, and parsley. If using feta cheese, add it now for an extra layer of flavor.
Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
Toss the salad: Pour the dressing over the salad and gently toss to combine all ingredients thoroughly. Adjust seasoning with additional salt and pepper if needed.
Serve: Enjoy immediately or refrigerate for at least 30 minutes to allow the flavors to meld. This salad can be served cold or at room temperature.
